Total waste management (TWM) has been making strides in the food and beverage (F&B) industry but is still very new to the scene. The Environmental Protection Agency estimated that in 2019, the F&B industry generated 66 million tons of waste in the United States, proving that there is a lot of room for improvement. Kurt Wirgau, Envita Solution’s Vice President of Business Development, has been monitoring the total waste management and food and beverage movement and met with Food Quality & Safety Magazine to discuss it.
